Vegan Persian Dizi

Are you interested in experiencing Persian traditions while visiting Iran? So, you should try “Dizi” with its relevant customs.

This food is one of the most famous and traditional Persian dishes. It is also called “Abgoosht”. Dizi refers to a pot in which it is served and Abgoosht means “meat juice” but interestingly our veganized Dizi doesn’t include any meat. It is made with chickpeas, white beans, onion, potatoes, tomatoes, turmeric, and dried lime. Actually, there is no need to use animal products to get the magic taste of this food, other ingredients are barely enough. Even when non-vegan Iranians test veganized Dizi, they cannot believe that it doesn’t contain any meat!

Now, to eat this meal, Iranian people sit on the floor on Persian carpet around the “sofreh” and usually the oldest woman separates the juice and serve it in individual bowls and we soak flat bread slices in it for a few seconds, they absorb the wonderful tasty juice and then we eat them with spoon (we call this custom “tilit”). After that, It is the strongest man’s turn to take the pot! He mashes the other ingredients to make “gooshkoobideh” and we eat it with flatbread, as well. The best choice for this dish is a kind of popular Persian bread called “sangak”. Also, Side dishes like pickles, onion slices, Shirazi salad, Doogh and fresh herbs are inseparable part of this meal and triple that amazing taste.

  • ½ cup chickpeas
  • ½ cup navy beans
  • 1 large onion
  • 3 medium potatoes
  • 2 eggplants
  • 2 tomatoes
  • 3 cloves of garlic
  • 3 tbsps. Tomato paste
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • 1 dried lime (optional)
  • water


  1. soak chickpeas and beans overnight and drain. Throw them in a pot and add water and chopped onion to it. Bring it to a boil and simmer until they are cooked.
  2.  Throw the peeled potatoes, peeled garlic, and tomatoes into the pot and let them cook in boiling water with beans and chickpeas. If you want to use the dried lime, chop it into halves and remove its seeds (be careful not to cut your fingers). Then, add them in with potatoes as well.
  3. Peel the eggplants and chop them lengthwise into halves. Put them in bran for 20 minutes and drain. Then, fry them in a small amount of oil and add them to the pot.


When everything is tender, add in salt, cinnamon, turmeric, pepper, and tomato paste. Add water if needed.

After 10 minutes taste it. If everything seems perfect you can remove the pot from heat and serve your delicious dizi.

Serving: 1. Throw the liquid part of this food in a large bowl gently and then into individual serving bowls using a ladle. Then throw small pieces of Persian flatbread into your bowl so that they absorb the tasty water and you can eat them with a spoon. 2. Then, mash the beans and other ingredients using a masher and then serve it on a large plate. You can now put some of the mashed dizi on your plate and then put some of it on a piece of flatbread and eat it.
