- soak chickpeas and beans overnight and drain. Throw them in a pot and add water and chopped onion to it. Bring it to a boil and simmer until they are cooked.
- Throw the peeled potatoes, peeled garlic, and tomatoes into the pot and let them cook in boiling water with beans and chickpeas. If you want to use the dried lime, chop it into halves and remove its seeds (be careful not to cut your fingers). Then, add them in with potatoes as well.
- Peel the eggplants and chop them lengthwise into halves. Put them in bran for 20 minutes and drain. Then, fry them in a small amount of oil and add them to the pot.
When everything is tender, add in salt, cinnamon, turmeric, pepper, and tomato paste. Add water if needed.
After 10 minutes taste it. If everything seems perfect you can remove the pot from heat and serve your delicious dizi.
